  • Introduction to Milk & Cultures: Learn about local milk, curds, and the science of cheesemaking.

  • Hands-On Curd Work: Cut, heat, and stretch curds into silky mozzarella.

  • Shaping Techniques: Form classic balls & Stracciatella 

  • Tasting Session: Sample your cheese warm with olive oil, herbs, and sea salt.

  • Dough Demo: Learn the secrets of soft, blistered pizza dough using long fermentation and quality flour.

  • Build Your Own Pizza: Choose from seasonal, locally sourced toppings β€” fresh tomatoes, basil, wild mushrooms, prosciutto, or garden vegetables. (availability of toppings dependent on the season)
