Hosted by: Two Goats School of Cheesemaking
Duration: 2–2.5 hours
Class Type: Hands-on & Tasting Workshop
Class is held at my residence in Wellfleet at 45 Pilgrim Spring Rd. Outdoor fire pit may be available weather permitting.
An immersive, sensory experience where guests create their own charcuterie boards and learn to pair cheeses—handcrafted and local—with curated wines. Participants will learn the craft of balancing textures, flavors, and presentation while discovering the stories behind each cheese and pairing.
By the end of the class, participants will:
Understand how to pair cheese with wine (acid, fat, and texture balance)
Learn the basics of charcuterie board composition & styling
Discover the characteristics of local and wild-foraged accompaniments (honey, nuts, fruits, herbs)
Identify flavor profiles of soft, hard, aged, and bloomy cheeses
Guided tasting of 4–5 cheeses (e.g. mozzarella, brie, blue, aged cheddar, chèvre)
Each paired with a complementary wine:
Mozzarella → Sauvignon Blanc or dry rosé
Aged cheddar → Cabernet Sauvignon
Blue → Port or Sauternes
Goat cheese → Chardonnay or Pinot Grigio
Discuss sensory notes and pairing rationale
3. Build Your Own Charcuterie Board
Hands-on creation with ingredients:
Selection of cheeses from tasting
Local (when available) cured meats
Foraged or local additions: beach plum jam, wild honey, cranberries, nuts, herbs
Crackers, breads, edible flowers, microgreens for presentation
Instructor demo of design principles: color, shape, height, texture balance
Share boards communally or enjoy individually
Optional mini-contest for “Most Artistic Board”
Closing toast & group photo
