  • Discover the characteristics of local and wild-foraged accompaniments (honey, nuts, fruits, herbs)

  • Identify flavor profiles of soft, hard, aged, and bloomy cheeses

  • Guided tasting of 4–5 cheeses (e.g. mozzarella, brie, blue, aged cheddar, chèvre)

  • Each paired with a complementary wine:

    • Mozzarella → Sauvignon Blanc or dry rosĂ©

    • Aged cheddar → Cabernet Sauvignon

    • Blue → Port or Sauternes

    • Goat cheese → Chardonnay or Pinot Grigio

  • Discuss sensory notes and pairing rationale

3. Build Your Own Charcuterie Board

  • Hands-on creation with ingredients:

    • Selection of cheeses from tasting

    • Local (when available) cured meats

    • Foraged or local additions: beach plum jam, wild honey, cranberries, nuts, herbs

    • Crackers, breads, edible flowers, microgreens for presentation

  • Instructor demo of design principles: color, shape, height, texture balance

  • Share boards communally or enjoy individually

  • Optional mini-contest for “Most Artistic Board”
