If you have never had Havarti you are in for a treat. Think of your most quiet and charismatic friend who makes good conversation at a party. This undeniable crowd pleaser is buttery and smooth and just sweet enough.

Like most things Havarti was born from a trail blazing woman. Hanne Nielson, a Danish farmer, spent her adult years roaming around Europe learning all about cheesemaking, which in all honestly sounds a lot like my own cheesemaking journey. Her dairy farmer husband was running his business in the red and well Hanne came along and decided to increase profits by developing this truly understated cheese. She was widely known as a teacher and mentor to all who crossed her path.

This cheese is aged anywhere from a few months to years. The longer the cheese is aged, the more intense the flavor becomes. Similar to Swiss cheese Havarti has small “eyes” through out.

Class begins at 6pm and lasts at least about 2 hours. This class is limited to 12 people.

Classes are taught in my open and airy kitchen located at 45 Pilgrim Spring Rd, Wellfleet on Cape Cod.

Cost is $85 per person.
